- Season your grill. Before your first cook, run the grill at 350°F for about 20 minutes with the lid closed. This burns off any manufacturing residue and primes the firepot.

- Set the temperature. For chicken thighs, set the grill to 275°F. For a pork butt, start at 225°F for a classic low-and-slow smoke.
